This is a very simple recipe that I found in Good Housekeeping mag and then slightly modified.
Ingredients:
1lb of frozen strawberries, slightly thawed.1/2 cup sugar1/2 tsp vanilla extract1 cup plain Greek yogurt (I only used three 5.3 oz containers)Step 1:
Blend 1 cup of strawberries in a food processor. It helps if the strawberries are slightly thawed, which I didn't do at first but highly recommend.Step 2:
Transfer berries to a large metal bowl.Step 3:
In food processor, puree yogurt, sugar and vanilla. Step 4:
Add remaining (slightly thawed) strawberries.Step 5:
Transfer to bowl with strawberries; stir well till blended.Step 6:
Freeze for one hour until firm. This time may vary depending on freezer temperatures. Mine took about two hours and I stirred it every 45 minutes.Step 7:
Enjoy!
It really is quite delicious and much more healthy than regular ice cream.

May I share another easy strawberry recipe I learned in Italy? all you need is ripe strawberries (the riper the better), sugar and red wine. just slice up the berries, add some sugar and enough wine just to below the level of strawberries. eat with a spoon and drink the delicious left over wine

Delicious!! But you know what? Here we don't have frozen strawberries!! It's the first time I see that!
But now we can find strawberries in the market, so I would try to prepare this with the natural ones :D

Yogurt is pretty disgusting, but I will give that a pass.
That is the same kind of vanilla I use. My fancy William Sonoma cookbook told me that Madagascar Bourbon vanilla is the best kind.

So I made the strawberry version, which was fantastic (I used your variations as well - 1/4 a cup of sugar just didn't seem like enough) and then, feeling a bit more daring, switched out the strawberries for frozen peaches and used honey Greek yogurt. Both were delicious.

who knew icecream could be made at home so simply? the texture looks good and yummy!
Have you seen the recipe for banana "ice cream" that's on TheKitchn? All you do is whip frozen bananas along with whatever sweeteners (or nuts or cinnamon, etc.) in a food processor. It takes about ten minutes, but if you keep whipping, the whole thing turns into frozen yogurt because of b-fruit's texture. Super good and easy!
